ZA’ATAR SPICED SMASHED
POTATOES

Using Garlic Tahini Sauce

Za’atar is a unique and versatile Middle Eastern spice blend of herbal, earthy, savory, tangy, and salty flavors. I mean, what’s not to love!

Vegan & Gluten Free

 

Ingredients

1lb mini Yukon gold potatoes (the best variety for this recipe) 

1.5 tsp Za’atar spice blend (we used a pre-mixed one….it is readily available)

3 TBLS extra virgin olive oil 

2 cloves garlic minced 

Salt 

1 tsp Baking soda (optional)

A small bunch of Italian flat-leaf parsley for garnish 

 

Instructions: 

  • Wash and rinse potatoes, place them into med-sized pot, cover with water, use a heavy pinch of salt and bring them to a gentle boil. One Special Tip: Adding baking soda when boiling potatoes remove the pectin in the potato, drawing the starch to the surface, resulting in a more crispy potato.

  • Cook for approx 20 mins. You should be able to stick a paring knife into the potato without resistance.

  • Strain, pat dry, and allow to cool at room temperature for 30 mins. 

  • Next, mix the extra virgin olive oil, seasonings, and garlic in a small bowl

  • On a flat surface, place a small piece of parchment paper over one potato one at a time and gently push down on the potato with the bottom of a jar or plate. What you want is the potato to smash but not break.

  •  

  • Place smashed potatoes in a greased air fryer pan or on a lined baking sheet if you are baking in the oven

  • Spoon the mixed seasoning and oil mixture over the top of each potato. Hit them with a dash of salt

  • Cook In an air fryer or Preheated oven at 400 degrees for approximately 20 minutes until desired golden brown and crispiness. 

  •  

  • Remove them and allow to cool for 5 mins. 

  • Place onto your favorite serving dish and garnish with chopped parsley 

  • Dips perfectly with Plant Bomb Garlic Tahini.
