VEGGIE ROAST GLOW BOWLS

Using Caribbean Peppa Sauce

Prep Time: 15 mins

Cook Time: 20 mins 

 

Ingredients:

  • 1 head of med-sized cauliflower de-stemmed and cut into florets 

  • 3 carrots peeled and cut into 1-inch wedges

  • 2 Med-sized sweet potatoes cut into 1-inch wedges

  • 2-15 oz cans of chickpeas drained and rinsed

  • 1 large bunch of Kale washed, de-stemmed, and torn into small pieces 

  • 1/2 cup Toasted pumpkin seeds 

  • 2 TBLS avocado or olive oil

  • Salt to taste 

  • Plant Bomb Caribbean Peppa Sauce 

  • Anti-inflammatory Spice Blend:

  • 1 tsp turmeric 

  • 1 tsp smoked or regular paprika

  • ½  tsp black pepper 

  • 2 cloves fresh garlic minced 

  • 2 tsp fresh ginger minced 

 

Instructions:

  • In a small bowl mix oil and all of the spice blend making a paste 

  • Toss cauliflower, carrots, sweet potatoes, and chickpeas with paste until evenly coated. Season with salt and place on a large baking sheet. 

  • Roast for 25 mins mixing halfway through. With 5 mins left add kale to the mixture and cook for the remainder of time until kale is gently wilted. Veggies should be golden brown roasted but still slightly firm in the middle. Add toasted pumpkin seeds and mix into the veggies. Prepare meals with a bed of quinoa or with roasted veggie mix alone.   • Peppa Sauce over the top for added EXPLOSIVE flavor!

 

Yield: 6 servings
