MAPLE ROASTED SWEET POTATO SPEARS W/ TOASTED PISTACHIOS

Using Garlic Tahini Sauce

Prep Time: 20 mins

Cook Time: 20 mins 

 

Ingredients:

  • 4 medium sized sweet potatoes peeled and cut into spears length-wise

  • 3 TBLS avocado oil 

  • 1 TBLS Maple Syrup 

  • 1 tsp paprika 

  • 1 tsp oregano 

  • â…› tsp cayenne pepper

  • Toasted pistachios chopped (optional)

  • Salt and pepper to taste 

  • Italian flat-leaf parsley for garnish 

  • Plant Bomb Garlic Tahini for drizzling over top

 

Instructions:

  • Boil sweet potatoes: In a medium-sized pot, bring ¾ full of water to a boil. Add sweet potatoes and a pinch of salt. Cook for 10-12 minutes until softened but still firm. Drain and pat dry.

  • Preheat oven: Set the oven to 450 degrees.

  • Make seasoning paste: In a large mixing bowl, whisk together oil, maple syrup, paprika, oregano, and cayenne to create a paste. Add sweet potatoes and toss until coated. Season with salt and pepper.

  • Roast sweet potatoes: Place coated sweet potatoes on a lined baking sheet. Bake for 15-20 minutes, flipping halfway through. They should be crisp and caramelized outside, and soft inside.

  • Serve: Remove from the oven and transfer to a serving dish. Drizzle with Plant Bomb Garlic Tahini and sprinkle with toasted pistachios. Enjoy!

 

Yield: 6-8 servings
