MAPLE ROASTED SWEET POTATO SPEARS W/ TOASTED PISTACHIOS

Ingredients:

4 medium sized sweet potatoes peeled and cut into spears length-wise

3 TBLS avocado oil

1 TBLS Maple Syrup

1 tsp paprika
-
1 tsp oregano
-
â…› tsp cayenne pepper

Toasted pistachios chopped (optional)

Salt and pepper to taste

Italian flat-leaf parsley for garnish

Plant Bomb Garlic Tahini for drizzling over top
Instructions:

Boil sweet potatoes: In a medium-sized pot, bring ¾ full of water to a boil. Add sweet potatoes and a pinch of salt. Cook for 10-12 minutes until softened but still firm. Drain and pat dry.

Preheat oven: Set the oven to 450 degrees.

Make seasoning paste: In a large mixing bowl, whisk together oil, maple syrup, paprika, oregano, and cayenne to create a paste. Add sweet potatoes and toss until coated. Season with salt and pepper.

Roast sweet potatoes: Place coated sweet potatoes on a lined baking sheet. Bake for 15-20 minutes, flipping halfway through. They should be crisp and caramelized outside, and soft inside.

Serve: Remove from the oven and transfer to a serving dish. Drizzle with Plant Bomb Garlic Tahini and sprinkle with toasted pistachios. Enjoy!
