Using Caribbean Peppa Sauce
This is one of our favorite tofu dishes!

Yields: 4-6 Servings

Cook Time: 25 mins
Ingredients
2 large blocks of organic extra-firm tofu, pressed, squeezed, and patted dry, then loosely crumble
1 -15 oz can of black beans rinsed and drained
1 tsp EVOO (extra virgin olive oil)
2 tsp chili powder
2 tsp garlic powder
2 tsp onion powder
1 tsp paprika
½ cup nutritional yeast
1tsp turmeric
1cup water
Salt and Pepper to taste
Optional chopped cilantro and sliced avocado to finish the dish
Step 1
Preheat the oven to 450 degrees. Place tofu on a lined baking sheet, toss lightly with oil, and season with salt and pepper. Bake for 15 mins until tofu is lightly golden brown. Tip: This step adds a lot of flavor and texture to the tofu.
Step 2
Mix all dry ingredients with water in a small bowl and set them aside to form a sauce.
Step 3
Add the sauce to a saute pan on low heat. Begin to lightly simmer the sauce while the tofu is baking.
