RED CURRY TOFU SATAY SKEWERS
Using Thai Almond Sauce
Yields: 8-10 skewers

Ingredients for the protein:
1 Block extra firm tofu diced into 1-inch cubes (or any protein of your choice)
2 tsp avocado oil or an oil of your choice, but keep the oil lite for best result
Ingredients for marinade:
2 TBLS Thai red curry paste
1 TBLS coconut aminos or low sodium Tamari
1 TBLS Rice wine vinegar
1 tsp lime juice
1 tsp sesame oil
1 tsp agave or maple syrup
Instructions:

Strain and then press a block of tofu with a cloth to remove as much of the water as possible

Cut tofu into 1-inch cubes

Mix all the rest of the ingredients for the marinade in a small bowl.

Pour marinade over the tofu and mix gently, making sure its fully incorporated.

Cover and allow to marinade for 30-60 minutes.

Build skewers placing four pieces of tofu on each.

Preheat a saute pan oil to med/ high.

Place skewers in one at a time and sear on each side for approximately 3 mins until a crispy crust is formed outside.

Remove the skewers from the pan onto a lined sheet pan

Place into a preheated oven a 400 degrees for 8 mins. (Although this step is not entirely necessary it absolutely improves the dish)

Place on your favorite dish and serve with Plant Bomb Thai Almond Sauce.
