MEDITERRANEAN GRILLED FLATBREAD WITH CREAMY GARLIC TAHINI CHICKPEA SPREAD
Using Garlic Tahini
An excellent dish to share with friends this summer! Incredible, refreshing flavors from the Mediterranean paired perfectly with the zestiness of Plant Bomb’s Garlic Tahini, this healthy and tasty flatbread recipe is guaranteed to be a hit at your next Bbq.

Ingredients

2 large flatbreads ( freshly made or store-bought, we used store-bought)

1 TBLS olive oil
-
1 tsp Za’atar spice or dried oregano
-
2 cups Arugula
-
1 cup Marinated Artichoke Hearts Grilled or roasted
-
½ cup Sun Dried Tomatoes
-
½ med-sized red onion sliced thinly and lightly roasted or sauteed.

½ cup nicoise or pitted Greek olives halved
-
½ block of vegan feta cheese Crumbled (Viola Life or Daiya brand makes a good one)

Plant Bomb Garlic Tahini Sauce to drizzle over the top

Creamy Garlic Tahini Chickpea Spread
Ingredients

1 can cooked chickpeas drained (Save the liquid (aka aquafaba) from the can)

2 TBLS aquafaba
-
1 TBLS Avocado oil or olive
-
2 TBLS lemon Juice
-
1/4 cup garlic tahini
-
1 tsp salt
Instructions
-
Mix all ingredients in a food processor or blender until smooth and creamy.

Place into a container and set aside.

Preheat a grill or grill pan to med/high heat. Brush flatbread on both sides with oil and za’atar spice or oregano. For store-bought Flatbread, grill on each side for 2-3 minutes until Desired char on the bread. Remove from heat and allow to rest for 10 mins.

Spread a healthy amount of the Creamy Garlic Tahini Chickpea Spread on top of the flatbread.

Assemble your flatbreads with arugula, artichoke hearts, sundried tomatoes, onions, olives, and Feta. Drizzle Plant Bomb Garlic Tahini over the top for extra flavor. Place flatbreads on your favorite serving platter and Enjoy!
