LENTIL BURGER WITH SWEET AND SPICY CABBAGE SLAW

Ingredients
2 TBLS Avocado or olive oil
3 cups cooked lentils
2 cloves of garlic
1 tsp onion powder
¼ cup tomato paste
2 tsp cumin
1.5 tsp chili powder,
1 stalk green onion sliced small
2 medium-sized carrots grated finely
Salt and pepper to taste
6 of your favorite burger buns
Plant Bomb Garlic Tahini
For the Slaw
½ head of cabbage sliced thinly
2 stalks green onions sliced thinly
1 carrot grated or 1 small bell pepper sliced thinly
1 TBLS lemon juice
2 TBLS avocado or olive oil
1 clove of garlic minced
1 tsp agave or maple syrup
1 tsp harissa paste or sriracha
Salt and pepper to taste
Instructions

In a med-sized pot, bring 1.5 cups of lentils dry with 3 cups of water. Season with salt and pepper and bring to a light boil. Reduce heat to low and cover for 15 -20 mins until lentils are tender and all water is absorbed. Remove from heat into a large mixing bowl and place in the fridge for at least 30 mins to cool.

Once lentils are chilled, add carrots, garlic, tomato paste, green onions, and spices. Season with salt and pepper.

Preheat a skillet to med heat and add oil. Pan-sear Burgers for 5 mins on each side until a light golden crust forms.

For the slaw mix, place all ingredients in a mixing bowl.

Briskly whisk together oil, lemon juice, agave, harissa paste or sriracha, garlic, and salt pepper, making a dressing. Pour over the top of your slaw mixture and toss to incorporate.

Toast buns to desired golden brown on the stovetop or toaster oven.

Assemble your burgers by drizzling a healthy amount of Plant Bomb Garlic Tahini on the top and bottom of the bun, place your patty on top, then add a healthy serving of slaw, add the top of the bun, and ENJOY.
